  • 2 (14.5 oz) cans diced tomatoes

  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese (for garnish)

  1. Cook the Beef:
    • Heat olive oil in a large pot or Dutch oven over medium heat.
    • Add the chopped onion and cook until softened, about 5 minutes.
    • Stir in the minced garlic and cook for an additional minute.
    • Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.
  2. Add Vegetables:
    • Stir in the chopped bell pepper and cook for 2-3 minutes until slightly tender.

    • Add the chili powder, ground cumin, paprika, dried oregano, and cayenne pepper (if using). Stir well to combine.
    • Season with salt and black pepper to taste.
  5. Simmer:
    • Bring the chili to a boil, then reduce the heat to low.
    • Cover and let it simmer for 20-30 minutes, stirring occasionally, until the flavors meld together and the chili thickens.
  6. Serve:
